This photo shows some very old bottles of Port wine being aged (the oldest
one in the top left corner from 1904). Before visiting Porto, I didn't
realize how many different varieties there were. Some age in bottles like
a normal red wine (called vintage port and not so common since it must
be drunk within 24 hours of opening). Other port wines (such as the tawny)
age in the barrels, but become very stable after bottling and don't improve
with age after that point. I found the most delicious to be the ones
aged in oak at least 30 years (I have not tasted a vintage port yet).
