A specialty of the Kansai region of Japan (the area that includes Nara,
Kyoto, Kobe, and Osaka) is okonomiyaki which is a large savory pancake
with seafood inside and topped with mayonaise, a sweet sauce, and
dried fish flakes which dance around from the heat like they were alive.
